Ingredients

  • 4 large potatoes, peeled and diced
  • 6 strips of bacon, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt to taste
  • Pepper to taste
  • Chives for garnish

Instructions

  1. Cook the diced bacon in a large pot over medium heat until crispy. Remove bacon and set aside, leaving drippings in the pot.
  2. Add chopped onion and minced garlic to the pot. Sauté until translucent.
  3. Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. Use an immersion blender to puree the soup until smooth. Alternatively, transfer in batches to a blender.
  5. Stir in heavy cream and season with salt and pepper. Heat through.
  6. Serve hot, topped with crispy bacon and chives.
