- 4 large potatoes, peeled and diced
- 6 strips of bacon, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- Salt to taste
- Pepper to taste
- Chives for garnish
Instructions
- Cook the diced bacon in a large pot over medium heat until crispy. Remove bacon and set aside, leaving drippings in the pot.
- Add chopped onion and minced garlic to the pot. Sauté until translucent.
- Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Use an immersion blender to puree the soup until smooth. Alternatively, transfer in batches to a blender.
- Stir in heavy cream and season with salt and pepper. Heat through.
- Serve hot, topped with crispy bacon and chives.
Notes
- For a smoky flavor, use smoked bacon.
- Consider adding cheddar cheese for extra richness.
