Instructions
- Preheat the oven to 425°F (220°C).
- Peel and cut the potatoes into uniform pieces.

- Add the potatoes to the bowl and toss until evenly coated.
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the oven for 30-35 minutes, turning halfway through.
- In the last 5 minutes, sprinkle Parmesan cheese on top.
- Remove from oven and let rest for 5 minutes before serving.
