- 2 pounds Yukon Gold potatoes, peeled and diced
- 1/2 cup heavy cream
- 4 tablespoons unsalted butter

- 1 teaspoon garlic powder
Instructions
- Preheat your oven to 400°F (200°C).
- Bring a large pot of salted water to a boil. Add the diced potatoes and cook until tender, about 15 minutes.
- Drain the potatoes and return them to the pot.
- Add butter, heavy cream, garlic powder, salt, and pepper to the potatoes.
- Using a potato masher or ricer, mash the potatoes until smooth and creamy.
- Stir in the grated Parmesan and chives.
- Transfer the mixture to a baking dish and smooth the top.
- Bake for 20-25 minutes, until the top is golden brown.
Notes
- For a crispy top, broil for an additional 2-3 minutes.
- Substitute the Yukon Gold potatoes with Russet for a fluffier texture.
- Experiment with different cheeses for varied flavor profiles.
