Ingredients

- 2 pounds of Yukon Gold potatoes, peeled and cubed
- 1/2 cup of heavy cream
- 1/4 cup of unsalted butter
- 1/2 cup of grated Parmesan cheese

- Pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Boil the potatoes in salted water until tender, about 15 minutes.
- Drain the potatoes and return them to the pot.
- Add heavy cream, butter, and half of the Parmesan cheese to the potatoes.
- Mash the potatoes until smooth and creamy.
- Stir in the rosemary, salt, and pepper.
- Transfer the mixture to a baking dish and sprinkle the remaining Parmesan cheese on top.
- Bake for 25 minutes until golden brown.
Notes
- For a crunchy top, broil for an additional 2-3 minutes after baking.
- Experiment with different herbs like thyme or chives for flavor variations.
