Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and garlic, sauté until translucent.

- Stir in diced potatoes, beef broth, tomato paste, paprika, salt, and pepper.
- Cover and simmer for 30 minutes, or until potatoes are tender.
- If using, sprinkle cheese on top and cover until melted.
- Serve hot, garnished with fresh herbs if desired.
