Ingredients

- 2 cups vegetable broth
- 1 cup water
- 1 cup bok choy, chopped
- 1 cup shiitake mushrooms, sliced
- 1 cup carrots, julienned
- 1 cup snow peas, trimmed
- 1/2 cup green onions, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- Heat sesame oil in a large pot over medium heat.
- Add garlic and ginger, sauté until fragrant.
- Pour in vegetable broth and water, bring to a simmer.
- Add carrots and cook for 3 minutes.
- Add shiitake mushrooms and snow peas, cook for another 2 minutes.
- Stir in bok choy and green onions, simmer for 1-2 minutes until tender.
- Season with soy sauce, salt, and pepper.
- Serve hot, garnished with additional green onions if desired.
