Ingredients

  • 1 cup bok choy, chopped
  • 1 cup shiitake mushrooms, sliced
  • 1 cup carrots, julienned
  • 1 cup snow peas, trimmed
  • 1/2 cup green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat sesame oil in a large pot over medium heat.
  2. Add garlic and ginger, sauté until fragrant.
  3. Pour in vegetable broth and water, bring to a simmer.
  4. Add carrots and cook for 3 minutes.
  5. Add shiitake mushrooms and snow peas, cook for another 2 minutes.
  6. Stir in bok choy and green onions, simmer for 1-2 minutes until tender.
  7. Season with soy sauce, salt, and pepper.
  8. Serve hot, garnished with additional green onions if desired.
