A rich chocolate mousse that combines dark chocolate and whipped cream for a decadent dessert.
Ingredients

- 200g dark chocolate (70% cocoa), chopped
- 4 large eggs, separated
- 50g granulated sugar
- 300ml heavy cream
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Melt the dark chocolate in a heatproof bowl over simmering water, stirring until smooth. Remove from heat and let cool slightly.
- In a separate bowl, whisk the egg yolks with granulated sugar until pale and creamy.
- Stir the melted chocolate into the egg yolk mixture, combining well.
- In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form.
- Gently fold the egg whites into the chocolate mixture in three additions.
- In another bowl, whip the heavy cream with vanilla extract until soft peaks form.
- Carefully fold the whipped cream into the chocolate mixture until fully incorporated.
- Divide the mousse into serving dishes and refrigerate for at least 2 hours before serving.
Notes
- For a variation, use milk chocolate for a sweeter mousse.
- Garnish with chocolate shavings or fresh berries for an elegant presentation.
