Ingredients

  • 4 large eggs, separated
  • 50g granulated sugar

Instructions

  1. Melt the dark chocolate in a heatproof bowl over simmering water, stirring until smooth. Remove from heat and let cool slightly.
  2. In a separate bowl, whisk the egg yolks with granulated sugar until pale and creamy.
  3. Stir the melted chocolate into the egg yolk mixture, combining well.
  4. In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form.
  5. Gently fold the egg whites into the chocolate mixture in three additions.
  6. In another bowl, whip the heavy cream with vanilla extract until soft peaks form.
  7. Carefully fold the whipped cream into the chocolate mixture until fully incorporated.
  8. Divide the mousse into serving dishes and refrigerate for at least 2 hours before serving.
