Instructions
- In a large saucepan, combine rice, milk, sugar, vanilla, cinnamon, and salt.
- Bring to a boil over medium heat, stirring frequently.
- Reduce heat to low and simmer for 20-25 minutes, or until rice is tender.
- In a bowl, whisk eggs. Gradually add a small amount of the hot rice mixture to the eggs, stirring constantly.
- Return the egg mixture to the saucepan, stirring to combine.
- Cook for an additional 5 minutes, stirring until thickened.
- Stir in raisins if using.
- Remove from heat and let it cool slightly before serving.
