- 2 cups Basmati rice
- 4 cups chicken stock
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Rinse the Basmati rice under cold water until the water runs clear.
- In a saucepan, heat olive oil over medium heat.
- Add cumin seeds and sauté until fragrant.
- Add chopped onion and garlic, cook until translucent.
- Stir in turmeric powder and mixed vegetables, sauté for 2 minutes.
- Add the rinsed rice and stir to coat with the oil and spices.
- Pour in the chicken stock and add salt to taste.
- Bring to a boil, then reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let it sit covered for 10 minutes.
- Fluff with a fork and garnish with fresh cilantro before serving.
