- 4 medium potatoes, diced
- 1 medium onion, chopped

Instructions
- Heat olive oil in a skillet over medium heat.
- Add diced potatoes and cook until golden brown, about 10-12 minutes.
- Add chopped onion and cook until translucent, about 5 minutes.
- Stir in the sausage and cook until browned, about 8-10 minutes.
- Season with garlic powder, salt, and pepper.
- In a separate pan, fry eggs to your preference.
- Serve the sausage and potato mixture topped with fried eggs and garnish with fresh parsley.
