Ingredients

- 1 cup dried green or brown lentils
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 6 cups vegetable broth
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat olive oil over medium heat.
- Add diced onion, carrots, and celery. Sauté for 5-7 minutes until vegetables soften.
- Add minced garlic, cumin, and smoked paprika. Cook for an additional minute until fragrant.
- Stir in the lentils, vegetable broth, and bay leaf. Bring to a boil.
- Reduce heat, cover, and simmer for 30-35 minutes until lentils are tender.
- Remove bay leaf. Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
- For a creamier texture, blend a portion of the soup and return it to the pot.
- Add diced potatoes for added heartiness.
- Try different herbs like thyme or rosemary for variation.
