A delicious slow cooker beef stew that combines tender meat with hearty vegetables in a rich broth.
Ingredients

- 2 lbs beef chuck, cut into 1-inch cubes
- 4 medium carrots, sliced
- 3 medium potatoes, diced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 bay leaves
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Brown the beef cubes on all sides, then transfer to the slow cooker.
- Add the carrots, potatoes, onions, and garlic to the slow cooker.
- In a bowl, mix the beef broth, tomato paste, thyme, rosemary, salt, and pepper.
- Pour the broth mixture over the meat and vegetables.
- Add bay leaves.
- Cover and cook on low for 8 hours or high for 4 hours.
- Remove bay leaves before serving.
Notes
- For a thicker stew, mix 2 tbsp of cornstarch with water and add during the last hour of cooking.
- Variations include adding mushrooms or peas for extra flavor and texture.
- Serve with crusty bread for a complete meal.
