Description

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 medium carrots, sliced
  • 3 medium potatoes, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Brown the beef cubes on all sides, then transfer to the slow cooker.
  3. Add the carrots, potatoes, onions, and garlic to the slow cooker.
  4. In a bowl, mix the beef broth, tomato paste, thyme, rosemary, salt, and pepper.
  5. Pour the broth mixture over the meat and vegetables.
  6. Add bay leaves.
  7. Cover and cook on low for 8 hours or high for 4 hours.
  8. Remove bay leaves before serving.

Notes

  • For a thicker stew, mix 2 tbsp of cornstarch with water and add during the last hour of cooking.
  • Variations include adding mushrooms or peas for extra flavor and texture.
  • Serve with crusty bread for a complete meal.
