- Salt and pepper to taste
- 1 cup sliced bell peppers
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a skillet over medium heat.
- Season chicken breasts with salt, pepper, oregano, and paprika.
- Sear chicken breasts in the skillet for 3-4 minutes on each side until golden brown.
- Transfer chicken to the slow cooker.
- Add chicken broth, diced tomatoes, chopped onion, minced garlic, and sliced bell peppers to the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, shred the chicken with two forks and mix it into the sauce.
- Serve hot over rice or pasta.
