Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 bell peppers, chopped
  • 1 can (28 ounces) diced tomatoes
  • 2 cups beef broth
  • 2 tablespoons paprika
  • 1 teaspoon caraway seeds
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups egg noodles
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Brown the beef in a skillet over medium-high heat for 5-7 minutes.
  2. Add the onions and garlic, cooking until translucent.
  3. Transfer the mixture to the slow cooker.
  4. Add bell peppers, diced tomatoes, beef broth, paprika, caraway seeds, salt, and pepper.
  5. Stir in Worcestershire sauce.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  7. In the last 30 minutes, add the egg noodles to the slow cooker.
  8. Garnish with parsley before serving.

Notes

  • For a spicier version, add red pepper flakes.
  • Serve with crusty bread for dipping.
  • Can substitute beef with ground turkey for a lighter option.
