  • 8 ounces elbow macaroni
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup smoked gouda cheese, shredded
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil

Instructions

  1. Preheat your smoker to 225°F.
  2. Cook the elbow macaroni according to package directions until al dente. Drain and set aside.
  3. In a saucepan, melt the butter over medium heat. Add the flour and whisk for 1-2 minutes.
  4. Slowly whisk in the milk and bring to a simmer, stirring constantly.
  5. Add the shredded cheddar and gouda cheese, smoked paprika, garlic powder, black pepper, and salt. Stir until the cheese is melted and smooth.
  6. Combine the cooked macaroni with the cheese sauce and mix well.
  7. Transfer the mac and cheese to a baking dish.
  8. In a separate bowl, mix the breadcrumbs with olive oil. Sprinkle over the mac and cheese.
  9. Place the baking dish in the smoker and cook for 30-45 minutes until the top is golden brown and crispy.
  10. Remove from the smoker and let it rest for a few minutes before serving.
