- 8 ounces elbow macaroni
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 2 cups whole milk
- 1 cup sharp cheddar cheese, shredded
- 1 cup smoked gouda cheese, shredded
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/2 cup breadcrumbs
- 2 tablespoons olive oil
Instructions
- Preheat your smoker to 225°F.
- Cook the elbow macaroni according to package directions until al dente. Drain and set aside.
- In a saucepan, melt the butter over medium heat. Add the flour and whisk for 1-2 minutes.
- Slowly whisk in the milk and bring to a simmer, stirring constantly.
- Add the shredded cheddar and gouda cheese, smoked paprika, garlic powder, black pepper, and salt. Stir until the cheese is melted and smooth.
- Combine the cooked macaroni with the cheese sauce and mix well.
- Transfer the mac and cheese to a baking dish.
- In a separate bowl, mix the breadcrumbs with olive oil. Sprinkle over the mac and cheese.
- Place the baking dish in the smoker and cook for 30-45 minutes until the top is golden brown and crispy.
- Remove from the smoker and let it rest for a few minutes before serving.
Notes
- For added flavor, try mixing in cooked bacon or pulled pork.
- Garnish with fresh chives or parsley for color.
