Ingredients

- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 cups kale or spinach, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Sauté until softened, about 5 minutes.
- Stir in garlic and cook for another minute.
- Add zucchini and bell pepper, cooking for 3-4 minutes.
- Pour in diced tomatoes and vegetable broth. Stir to combine.
- Add thyme, basil, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Stir in kale or spinach and cook until wilted, about 5 minutes.
- Adjust seasoning as needed. Serve hot.
Notes
- For a creamier texture, blend a portion of the soup and return it to the pot.
- Add cooked beans or lentils for added protein.
- Garnish with fresh herbs for enhanced flavor.
