Ingredients

  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups kale or spinach, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Sauté until softened, about 5 minutes.
  3. Stir in garlic and cook for another minute.
  4. Add zucchini and bell pepper, cooking for 3-4 minutes.
  5. Pour in diced tomatoes and vegetable broth. Stir to combine.
  6. Add thyme, basil, salt, and pepper. Bring to a boil.
  7. Reduce heat and simmer for 20 minutes.
  8. Stir in kale or spinach and cook until wilted, about 5 minutes.
  9. Adjust seasoning as needed. Serve hot.
