Instructions

  1. Rinse the split peas under cold water.

  3. Add the onion, carrots, and celery. Sauté until softened.
  4. Add garlic and cook for an additional minute.
  5. Stir in the split peas, broth, bay leaf, and thyme.
  6. Bring to a boil, then reduce the heat and simmer for 45 minutes or until peas are tender.
  7. Remove bay leaf and blend the soup for a smooth texture, or leave it chunky if preferred.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with fresh herbs if desired.
