Ingredients

- 1 pound dried green split peas
- 1 ham hock
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken or vegetable broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Rinse the split peas under cold water and set aside.
- In a large pot, sauté the onion, carrots, and celery in a small amount of oil until softened.
- Add the garlic and cook for an additional minute.
- Stir in the split peas, ham hock, broth, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for about 1.5 hours, or until peas are tender.
- Remove the ham hock, shred the meat, and return it to the pot.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh herbs if desired.
Notes
- For a vegetarian version, omit the ham and use smoked paprika for flavor.
- Consider blending the soup for a smoother texture.
- Adjust the consistency with additional broth if necessary.
