Ingredients

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar or Gruyère)
  • 1/4 cup cooked bacon, chopped
  • 1/4 cup spinach, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a blender, combine eggs, cottage cheese, salt, and pepper. Blend until smooth.
  3. Stir in the shredded cheese, bacon, and spinach by hand.
  4. Grease a silicone mold with cooking spray.
  5. Pour the egg mixture into the mold, filling each cavity about 3/4 full.
  6. Place the mold in a baking dish and fill the dish with hot water halfway up the sides of the mold.
  7. Bake for 25-30 minutes, or until the egg bites are set and a toothpick comes out clean.
  8. Remove from the oven and let cool for a few minutes before carefully removing the egg bites from the mold.
