Instructions
- Preheat your oven to 400°F (200°C).
- Season the steaks generously with salt and pepper.
- Heat olive oil in a cast-iron skillet over medium-high heat.

- Transfer the skillet to the oven and cook for an additional 5-7 minutes for medium-rare.
- Remove the steaks and let them rest for 5 minutes.
- Meanwhile, boil the diced potatoes in salted water until tender, about 15 minutes.
- Drain the potatoes and return them to the pot.
- Add butter and garlic, and mash until smooth.
- Plate the mashed potatoes and top with the steak. Garnish with parsley.
