  • 4 cups chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 2 bay leaves

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chicken pieces and brown on all sides, about 5-7 minutes.
  3. Remove the chicken and set aside. In the same pot, add the onion and garlic, sautéing until translucent.
  4. Add the carrots, potatoes, and celery. Cook for another 5 minutes.
  5. Stir in the tomato paste, thyme, paprika, and bay leaves.
  6. Return the chicken to the pot and pour in the chicken broth.
  7. Bring to a boil, then reduce heat and let it simmer for 1 hour or until the chicken is tender.
  8. Season with salt and pepper to taste before serving.
