- 4 lbs chicken, cut into pieces
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 cup celery, chopped
- 4 cups chicken broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chicken pieces and brown on all sides, about 5-7 minutes.
- Remove the chicken and set aside. In the same pot, add the onion and garlic, sautéing until translucent.
- Add the carrots, potatoes, and celery. Cook for another 5 minutes.
- Stir in the tomato paste, thyme, paprika, and bay leaves.
- Return the chicken to the pot and pour in the chicken broth.
- Bring to a boil, then reduce heat and let it simmer for 1 hour or until the chicken is tender.
- Season with salt and pepper to taste before serving.
Notes
- For added depth, marinate the chicken in spices for a few hours before cooking.
- Consider adding a splash of white wine for acidity.
- Serve with crusty bread or over rice for a complete meal.
