- 200g powdered sugar
- 300ml heavy cream
- 1 teaspoon vanilla extract
- 250g fresh strawberries, pureed
- 5g gelatin powder (optional)
- 50ml water (for gelatin)
- Additional strawberries for garnish
Instructions
- Combine graham cracker crumbs and melted butter in a bowl. Mix until fully combined.
- Press the mixture into the bottom of a 9-inch springform pan to form a crust.
- In a separate bowl, beat cream cheese and powdered sugar until smooth.
- Add heavy cream and vanilla extract. Whip until soft peaks form.
- Fold in the strawberry puree gently into the cream cheese mixture.
- If using gelatin, dissolve it in warm water and mix into the cheesecake mixture.
- Pour the cheesecake filling over the crust and smooth the top.
- Refrigerate for at least 4 hours or until set.
- Garnish with fresh strawberries before serving.
