- 1 lb boneless chicken thighs
- 2 cups jasmine rice
- 4 cups chicken broth
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp ginger, minced
- 2 garlic cloves, minced
- 1 cup cucumber, sliced
- 1 cup carrots, julienned
- 2 green onions, chopped
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Marinate chicken with soy sauce, sesame oil, ginger, garlic, salt, and pepper. Let it sit for 30 minutes.
- Rinse jasmine rice under cold water until water runs clear.
- In a pot, combine rice and chicken broth. Bring to a boil, then reduce heat and cover. Cook for 15 minutes.
- In a skillet, sear marinated chicken over medium heat until cooked through, about 6-8 minutes per side.
- Remove chicken from skillet and let it rest for 5 minutes before slicing.
- Fluff cooked rice and portion it into bowls.
- Top rice with sliced chicken, cucumber, carrots, and green onions.
- Garnish with fresh cilantro before serving.

- For a spicy kick, add sliced jalapeños.
- Consider using brown rice for a healthier option.
