Ingredients

  • 2 cups jasmine rice
  • 4 cups chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp ginger, minced
  • 2 garlic cloves, minced
  • 1 cup cucumber, sliced
  • 1 cup carrots, julienned
  • 2 green onions, chopped
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Marinate chicken with soy sauce, sesame oil, ginger, garlic, salt, and pepper. Let it sit for 30 minutes.
  2. Rinse jasmine rice under cold water until water runs clear.
  3. In a pot, combine rice and chicken broth. Bring to a boil, then reduce heat and cover. Cook for 15 minutes.
  4. In a skillet, sear marinated chicken over medium heat until cooked through, about 6-8 minutes per side.
  5. Remove chicken from skillet and let it rest for 5 minutes before slicing.
  6. Fluff cooked rice and portion it into bowls.
  7. Top rice with sliced chicken, cucumber, carrots, and green onions.
  8. Garnish with fresh cilantro before serving.
