Ingredients

- 4 ears of corn, husked
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- Salt to taste
- 1/2 cup crumbled cotija cheese
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
- 8 small corn tortillas
Instructions
- Preheat the grill to medium-high heat.
- Brush the corn with olive oil and sprinkle with chili powder, smoked paprika, and salt.
- Grill the corn for about 10-12 minutes, turning occasionally until charred and tender.
- Remove corn from the grill and let it cool slightly, then cut the kernels off the cob.
- Warm the corn tortillas on the grill for about 30 seconds on each side.
- Assemble the tacos by adding grilled corn, cotija cheese, and cilantro to each tortilla.
- Serve with lime wedges on the side for squeezing over the tacos.
Notes
- For added flavor, consider adding diced jalapeños.
- Try substituting feta cheese for cotija for a different taste.
