Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 pound ground beef
  • 1 can diced tomatoes (14.5 oz)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, sauté onion and garlic until translucent.
  4. Add ground beef and cook until browned.
  5. Stir in cooked rice, diced tomatoes, cumin, paprika, salt, and pepper.
  6. Stuff the mixture into each pepper.
  7. Place peppers in a baking dish and cover with foil.
  8. Bake for 30 minutes.
  9. Remove foil, add cheese on top (if using), and bake for an additional 10 minutes.

Notes

  • You can substitute ground turkey or chicken for beef.
  • For a vegetarian option, replace meat with black beans or lentils.
