Ingredients

- 4 large bell peppers
- 1 cup cooked rice
- 1 pound ground beef
- 1 can diced tomatoes (14.5 oz)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- Black pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, sauté onion and garlic until translucent.
- Add ground beef and cook until browned.
- Stir in cooked rice, diced tomatoes, cumin, paprika, salt, and pepper.
- Stuff the mixture into each pepper.
- Place peppers in a baking dish and cover with foil.
- Bake for 30 minutes.
- Remove foil, add cheese on top (if using), and bake for an additional 10 minutes.
Notes
- You can substitute ground turkey or chicken for beef.
- For a vegetarian option, replace meat with black beans or lentils.
- Garnish with fresh herbs for added flavor.
