  • 1 cup cooked rice
  • 1 pound ground beef or turkey
  • 1 cup diced tomatoes
  • 1 small onion, diced
  • 2 cloves garlic, minced

  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds.
  3. In a skillet, sauté onions and garlic until translucent.
  4. Add ground meat and cook until browned.
  5. Mix in cooked rice, diced tomatoes, cumin, paprika, salt, and pepper.
  6. Stuff each pepper with the meat mixture.
  7. Place stuffed peppers in a baking dish and cover with foil.
  8. Bake for 30 minutes, then remove foil and add cheese if desired.
  9. Bake for an additional 10 minutes until cheese is melted.
  10. Serve warm.
