Ingredients

- 4 large bell peppers
- 1 cup cooked rice
- 1 pound ground beef or turkey
- 1 cup diced tomatoes
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds.
- In a skillet, sauté onions and garlic until translucent.
- Add ground meat and cook until browned.
- Mix in cooked rice, diced tomatoes, cumin, paprika, salt, and pepper.
- Stuff each pepper with the meat mixture.
- Place stuffed peppers in a baking dish and cover with foil.
- Bake for 30 minutes, then remove foil and add cheese if desired.
- Bake for an additional 10 minutes until cheese is melted.
- Serve warm.
Notes
- Feel free to use quinoa or couscous instead of rice for a variation.
- Add chopped vegetables to the stuffing for extra nutrition.
- For a spicy kick, add jalapeños to the filling.
