Ingredients

  • 1/2 cup brown sugar
  • 1/4 cup milk
  • 1/4 cup butter, melted
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup pecans, chopped
  • 1/2 cup mini marshmallows (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil sweet potatoes until tender, then drain and mash.
  3. In a mixing bowl, combine mashed sweet potatoes, brown sugar, milk, butter, eggs, vanilla, cinnamon, and nutmeg. Mix until smooth.
  4. Transfer the mixture to a greased baking dish.
  5. In a separate bowl, mix chopped pecans with a tablespoon of melted butter and sprinkle over the sweet potato mixture.
  6. If desired, add mini marshmallows on top.
  7. Bake for 30-35 minutes, until heated through and pecans are toasted.
