A rich and creamy sweet potato casserole topped with crunchy pecans.

- 4 cups sweet potatoes, mashed
- 1/2 cup brown sugar
- 1/4 cup milk
- 1/4 cup butter, melted
- 2 eggs, beaten
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 cup pecans, chopped
- 1/2 cup mini marshmallows (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Boil sweet potatoes until tender, then drain and mash.
- In a mixing bowl, combine mashed sweet potatoes, brown sugar, milk, butter, eggs, vanilla, cinnamon, and nutmeg. Mix until smooth.
- Transfer the mixture to a greased baking dish.
- In a separate bowl, mix chopped pecans with a tablespoon of melted butter and sprinkle over the sweet potato mixture.
- If desired, add mini marshmallows on top.
- Bake for 30-35 minutes, until heated through and pecans are toasted.
Notes
- For a creamier texture, add more milk.
- You can substitute maple syrup for brown sugar for a different flavor.
- Experiment with different nuts like walnuts or hazelnuts.
