Ingredients

- 2 cups long-grain white rice
- 1 lb ground beef
- 1 packet taco seasoning
- 4 cups water
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 cup shredded cheese
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a large pot, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes.
- While the rice cooks, heat a skillet over medium heat. Add the ground beef, breaking it apart as it cooks.
- Once browned, drain excess fat and stir in the taco seasoning with 1/4 cup of water. Simmer for 5 minutes.
- Add black beans, corn, and diced tomatoes to the beef mixture. Stir and heat through.
- Once rice is cooked, fluff it with a fork and season with salt and pepper.
- In a serving dish, layer the rice, then the beef mixture, and top with shredded cheese and green onions.
- Serve hot, and enjoy your taco rice.
Notes
- For a vegetarian option, substitute ground beef with textured vegetable protein.
- Garnish with avocado or sour cream for added flavor.
- Try adding jalapeños for extra spice.
