Description

Ingredients

  • 2 cups long-grain white rice
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 4 cups water
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a large pot, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes.
  3. While the rice cooks, heat a skillet over medium heat. Add the ground beef, breaking it apart as it cooks.
  4. Once browned, drain excess fat and stir in the taco seasoning with 1/4 cup of water. Simmer for 5 minutes.
  5. Add black beans, corn, and diced tomatoes to the beef mixture. Stir and heat through.
  6. Once rice is cooked, fluff it with a fork and season with salt and pepper.
  7. In a serving dish, layer the rice, then the beef mixture, and top with shredded cheese and green onions.
  8. Serve hot, and enjoy your taco rice.

  • For a vegetarian option, substitute ground beef with textured vegetable protein.
  • Garnish with avocado or sour cream for added flavor.
