Ingredients

- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (28 oz) diced tomatoes
- 1 can (4 oz) diced green chilies
- 2 cups beef broth
- 2 tbsp taco seasoning
- 1 tsp cumin
- Salt and pepper to taste
- Shredded cheese for topping
- Chopped cilantro for garnish
- Sour cream for serving
Instructions
- In a large pot, brown the ground beef over medium heat.
- Add the chopped onion and garlic; sauté until softened.
- Stir in the taco seasoning and cumin; cook for 1 minute.
- Add the black beans, kidney beans, corn, diced tomatoes, green chilies, and beef broth.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Season with salt and pepper to taste.
- Serve hot, topped with shredded cheese, cilantro, and a dollop of sour cream.
Notes
- For a spicier soup, add jalapeños or hot sauce.
- Use ground turkey or chicken for a leaner option.
- Serve with tortilla chips for added crunch.
