Ingredients

  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (28 oz) diced tomatoes
  • 1 can (4 oz) diced green chilies
  • 2 cups beef broth
  • 2 tbsp taco seasoning
  • 1 tsp cumin
  • Salt and pepper to taste
  • Shredded cheese for topping
  • Chopped cilantro for garnish
  • Sour cream for serving

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add the chopped onion and garlic; sauté until softened.
  3. Stir in the taco seasoning and cumin; cook for 1 minute.
  4. Add the black beans, kidney beans, corn, diced tomatoes, green chilies, and beef broth.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with shredded cheese, cilantro, and a dollop of sour cream.
