- 4 cups cooked jasmine rice
- 2 tablespoons vegetable oil
- 2 large eggs, beaten
- 1 cup mixed vegetables (peas, carrots, corn)
- 1/2 cup green onions, chopped
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large skillet over medium-high heat.
- Add the beaten eggs and scramble until fully cooked. Remove and set aside.
- Add mixed vegetables to the skillet and stir-fry for 2-3 minutes.
- Add the cooked rice, breaking up any clumps.
- Pour in the soy sauce, oyster sauce, and sesame oil. Stir to combine.
- Add the scrambled eggs and green onions. Stir-fry for another 2 minutes.
- Season with salt and pepper to taste. Serve hot.
Notes
- Use day-old rice for better texture.
- Experiment with protein like chicken or shrimp.
