Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Trim the beef tenderloin, removing any silver skin and excess fat.
  3. Season the tenderloin generously with salt and black pepper.
  4. In a large skillet, heat olive oil over medium-high heat.
  5. Sear the tenderloin on all sides until browned, about 3-4 minutes per side.
  6. Remove from heat and let it rest briefly.
  7. Spread Dijon mustard evenly over the tenderloin.
  8. Sprinkle minced garlic, chopped rosemary, and thyme over the mustard.
  9. Transfer the tenderloin to a roasting pan.
  10. Pour red wine into the pan, then roast in the oven for 25-30 minutes for medium-rare.
  11. Use a meat thermometer to check for an internal temperature of 130°F (54°C).
  12. Remove from the oven and let rest for 10-15 minutes before slicing.
  13. In the same skillet, melt butter and whisk in the pan juices to create a sauce.
  14. Slice the tenderloin and serve with sauce drizzled on top.
