A collection of easy side dishes perfect for Thanksgiving.
Ingredients

- 2 cups of green beans, trimmed
- 1 cup of baby carrots, sliced
- 1 cup of corn kernels, fresh or frozen
- 1/2 cup of diced onions
- 4 tablespoons of butter
- 2 tablespoons of olive oil
- 1 teaspoon of garlic powder
- Salt and pepper to taste
- 1/4 cup of grated Parmesan cheese
Instructions
- In a large pot, bring salted water to a boil.
- Add green beans and cook for 3-4 minutes until bright green.
- Remove green beans and place them in ice water to stop cooking.
- In a skillet, heat olive oil and 2 tablespoons of butter over medium heat.
- Add onions and cook until translucent.
- Add carrots and corn; sauté for 5-7 minutes until tender.
- Stir in garlic powder, salt, and pepper.
- Add the green beans back to the skillet and toss to combine.
- Remove from heat and sprinkle with Parmesan cheese.
- Serve warm on a platter.
Notes
- You can substitute asparagus for green beans.
- Add crushed red pepper for extra heat.
- For a vegan option, omit cheese and use plant-based butter.
