Ingredients

  • 2 cups of green beans, trimmed
  • 1 cup of baby carrots, sliced
  • 1 cup of corn kernels, fresh or frozen
  • 1/2 cup of diced onions
  • 4 tablespoons of butter
  • 2 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste
  • 1/4 cup of grated Parmesan cheese

Instructions

  1. In a large pot, bring salted water to a boil.
  2. Add green beans and cook for 3-4 minutes until bright green.
  3. Remove green beans and place them in ice water to stop cooking.
  4. In a skillet, heat olive oil and 2 tablespoons of butter over medium heat.
  5. Add onions and cook until translucent.
  6. Add carrots and corn; sauté for 5-7 minutes until tender.
  7. Stir in garlic powder, salt, and pepper.
  8. Add the green beans back to the skillet and toss to combine.
  9. Remove from heat and sprinkle with Parmesan cheese.
  10. Serve warm on a platter.

Notes

  • You can substitute asparagus for green beans.
  • Add crushed red pepper for extra heat.
  • For a vegan option, omit cheese and use plant-based butter.
