Ingredients

- 1 pound of fresh Brussels sprouts, trimmed and halved
- 1/2 cup of balsamic vinegar
- 1/4 cup of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/4 cup of grated Parmesan cheese
- 1/2 cup of toasted walnuts, chopped
- Fresh thyme leaves for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, whisk together balsamic vinegar, olive oil, salt, and black pepper.
- Add Brussels sprouts and toss until well coated.
- Spread the Brussels sprouts evenly on a baking sheet.
- Roast for 20-25 minutes, or until caramelized and tender, stirring halfway through.
- Remove from the oven and sprinkle with Parmesan cheese and toasted walnuts.
- Return to the oven for an additional 5 minutes until the cheese is melted.
- Garnish with fresh thyme leaves before serving.
Notes
- For added flavor, consider drizzling a honey glaze over the Brussels sprouts before serving.
- Substitute walnuts with pecans for a different texture.
- Experiment with different cheeses such as feta or goat cheese for variation.
