Ingredients

  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef broth
  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 bay leaf
  • Olive oil for sautéing

Instructions

  1. In a bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, and pepper. Mix until well combined.
  2. Form mixture into small meatballs, about 1 inch in diameter.
  3. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Sauté until softened.
  4. Add meatballs to the pot, browning on all sides.
  5. Pour in crushed tomatoes and beef broth. Add oregano, basil, and bay leaf.
  6. Bring to a simmer and cook for 30 minutes, or until meatballs are cooked through.
  7. Remove bay leaf before serving.

Notes

  • For a spicier version, add red pepper flakes to the meatball mixture.
  • Serve with crusty bread for dipping.
  • Garnish with additional parsley and Parmesan cheese.
