Ingredients

Scale
  • 400g spaghetti
  • 800g ripe tomatoes, diced
  • 3 cloves garlic, minced
  • 50ml olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes
  • Fresh basil leaves, for garnish
  • Parmesan cheese, grated, for serving

Instructions

  1. Boil water in a large pot. Add salt and cook the spaghetti according to package instructions until al dente.

  3. Add minced garlic and sauté until fragrant, about 30 seconds.
  4. Add diced tomatoes, salt, black pepper, and red pepper flakes. Simmer for 10-15 minutes until the sauce thickens.
  5. Drain the spaghetti, reserving some pasta water.
  6. Toss the spaghetti with the sauce, adding reserved pasta water for desired consistency.
  7. Plate the pasta, garnish with fresh basil and grated Parmesan.

Notes

  • Use San Marzano tomatoes for a sweeter sauce.
  • Experiment with different pasta shapes.
