Ingredients

- 400g spaghetti
- 800g ripe tomatoes, diced
- 3 cloves garlic, minced
- 50ml olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes
- Fresh basil leaves, for garnish
- Parmesan cheese, grated, for serving
Instructions
- Boil water in a large pot. Add salt and cook the spaghetti according to package instructions until al dente.
- While the pasta cooks, heat olive oil in a pan over medium heat.
- Add minced garlic and sauté until fragrant, about 30 seconds.
- Add diced tomatoes, salt, black pepper, and red pepper flakes. Simmer for 10-15 minutes until the sauce thickens.
- Drain the spaghetti, reserving some pasta water.
- Toss the spaghetti with the sauce, adding reserved pasta water for desired consistency.
- Plate the pasta, garnish with fresh basil and grated Parmesan.
Notes
- Use San Marzano tomatoes for a sweeter sauce.
- Experiment with different pasta shapes.
- For a richer flavor, add a splash of red wine to the sauce.
