Ingredients

  • Carrot – 1 large, grated
  • Celery – 1 stalk, chopped
  • Garlic – 2 cloves, minced
  • Vegetable broth – 6 cups
  • Bay leaf – 1
  • Lemon juice – 2 tablespoons
  • Sour cream – for serving
  • Fresh dill – for garnish

Instructions

  1. In a large pot, sauté onion, carrot, and celery until softened.
  2. Add garlic and beets, cooking for an additional 5 minutes.
  3. Pour in vegetable broth and add bay leaf. Bring to a boil.
  4. Reduce heat and simmer for 30-40 minutes until beets are tender.
  5. Remove bay leaf and blend the soup until smooth.
  6. Stir in lemon juice and adjust seasoning as needed.
  7. Serve hot, garnished with sour cream and fresh dill.
