Description
Traditional beet soup, also known as borscht, is a nutritious dish with a deep earthy flavor.
Ingredients
- Beets – 4 medium, peeled and diced
- Onion – 1 medium, finely chopped
- Carrot – 1 large, grated
- Celery – 1 stalk, chopped
- Garlic – 2 cloves, minced
- Vegetable broth – 6 cups
- Bay leaf – 1
- Lemon juice – 2 tablespoons
- Sour cream – for serving
- Fresh dill – for garnish
Instructions
- In a large pot, sauté onion, carrot, and celery until softened.
- Add garlic and beets, cooking for an additional 5 minutes.
- Pour in vegetable broth and add bay leaf. Bring to a boil.
- Reduce heat and simmer for 30-40 minutes until beets are tender.
- Remove bay leaf and blend the soup until smooth.
- Stir in lemon juice and adjust seasoning as needed.
- Serve hot, garnished with sour cream and fresh dill.
Notes
- For a richer flavor, roast beets before adding them to the soup.
- Experiment with adding potatoes for a heartier texture.
