Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Chives for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Add minced garlic and sauté for another minute.
  4. Stir in diced potatoes and thyme, cooking for 2-3 minutes.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat and simmer until potatoes are tender, about 20 minutes.
  7. Blend the soup with an immersion blender until smooth.
  8. Stir in coconut milk and season with salt and pepper.
  9. Serve hot, garnished with chopped chives.
