Ingredients

- 4 large potatoes, peeled and diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 2 tablespoons olive oil
- 1 teaspoon thyme
- Salt and pepper to taste
- Chives for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and sauté until translucent.
- Add minced garlic and sauté for another minute.
- Stir in diced potatoes and thyme, cooking for 2-3 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer until potatoes are tender, about 20 minutes.
- Blend the soup with an immersion blender until smooth.
- Stir in coconut milk and season with salt and pepper.
- Serve hot, garnished with chopped chives.
Notes
- For a spicier version, add red pepper flakes.
- You can substitute coconut milk with almond milk for a lighter option.
- Try adding sautéed mushrooms for extra depth of flavor.
