Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin pan with cupcake liners.
  2. In a bowl, sift together flour, sugar, baking soda, salt, and cocoa powder.
  3. In another bowl, mix oil, buttermilk, eggs, food coloring, vanilla, and vinegar until well combined.
  4. Gradually add dry ingredients to the wet mixture, mixing until just combined.
  5. Fill the cupcake liners two-thirds full with batter.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow cupcakes to cool completely on a wire rack.
  8. For the frosting, beat cream cheese and butter together until smooth.
  9. Gradually add powdered sugar and vanilla, mixing until fluffy.
