- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 teaspoon Italian seasoning
- Salt, to taste
- Pepper, to taste
- Fresh basil, for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt, pepper, and Italian seasoning.
- Add the chicken to the skillet and cook for 6-7 minutes on each side until golden brown and cooked through.
- Remove chicken from the skillet and let it rest for 5 minutes before slicing.
- In the same skillet, add garlic and sauté for 30 seconds.
- Add bell pepper, zucchini, and cherry tomatoes, cooking until tender, about 5-7 minutes.
- Return sliced chicken to the skillet, mixing well with the vegetables.
- Plate the dish and garnish with fresh basil before serving.
