Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cans (15 oz) white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 can (4 oz) diced green chilies
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
  2. Add minced garlic and cook for another minute.
  3. Add chicken breasts to the pot, season with salt, pepper, cumin, oregano, and cayenne pepper.
  4. Pour in chicken broth and bring to a simmer. Cook for 20-25 minutes until chicken is cooked through.
  5. Remove chicken from pot and shred using two forks.
  6. Add white beans and diced green chilies to the pot. Return shredded chicken to the pot.
  7. Simmer for an additional 10 minutes to allow flavors to meld.
  8. Stir in sour cream and chopped cilantro before serving.

Notes

  • For a thicker chili, mash some of the beans before adding them to the pot.
