Ingredients

- 2 lbs beef chuck roast
- 4 cups beef broth
- 3 medium carrots, sliced
- 2 medium potatoes, diced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tsp dried thyme
- 1 tsp black pepper
- 1 tsp salt
- 2 tbsp Worcestershire sauce
- 1 bay leaf
Instructions
- Season the beef with salt and pepper.
- Heat a skillet over medium-high heat and sear the beef on all sides for 3-4 minutes.
- Transfer the beef to the crockpot.
- Add the broth, carrots, potatoes, onion, garlic, thyme, Worcestershire sauce, and bay leaf to the crockpot.
- Cover and cook on low for 8 hours or high for 4 hours.
- Remove the bay leaf before serving.
- Serve hot, garnished with fresh parsley if desired.
Notes
- For a thicker sauce, remove some broth and mix with cornstarch before adding back into the pot.
- Experiment with different vegetables such as parsnips or turnips.
- Pair with crusty bread for a complete meal.
