Ingredients

  • 2 lbs beef chuck roast
  • 4 cups beef broth
  • 3 medium carrots, sliced
  • 2 medium potatoes, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp dried thyme
  • 1 tsp black pepper
  • 1 tsp salt
  • 2 tbsp Worcestershire sauce
  • 1 bay leaf

Instructions

  1. Season the beef with salt and pepper.
  2. Heat a skillet over medium-high heat and sear the beef on all sides for 3-4 minutes.
  3. Transfer the beef to the crockpot.
  4. Add the broth, carrots, potatoes, onion, garlic, thyme, Worcestershire sauce, and bay leaf to the crockpot.
  5. Cover and cook on low for 8 hours or high for 4 hours.
  6. Remove the bay leaf before serving.
  7. Serve hot, garnished with fresh parsley if desired.

Notes

  • For a thicker sauce, remove some broth and mix with cornstarch before adding back into the pot.
  • Experiment with different vegetables such as parsnips or turnips.
  • Pair with crusty bread for a complete meal.
