These almond jam thumbprint cookies are a delightful treat with a sweet jam center.

- 1 cup almond flour
- 1/2 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup fruit jam (your choice)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, cream together butter and sugar until light.
- Add egg yolk and vanilla extract, mix well.
- Stir in almond flour, all-purpose flour, and salt until combined.
- Form dough into small balls and place them on a baking sheet.
- Make an indentation in the center of each ball.
- Fill each indentation with fruit jam.
- Bake for 12-15 minutes until lightly golden.
- Let cool on a wire rack before serving.
