- 2 cups black eyed peas, soaked overnight
- 4 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- 1 teaspoon thyme
- 1 bay leaf
Instructions
- Preheat your oven to 350°F (175°C).
- In a pot, heat olive oil over medium heat. Add chopped onion and garlic. Sauté until soft.
- Add soaked black eyed peas, broth, salt, pepper, thyme, and bay leaf to the pot.
- Bring the mixture to a boil, then reduce heat and let it simmer for 10 minutes.
- Transfer the mixture to a baking dish.
- Bake in the oven for 1 hour, or until peas are tender.
Notes
- Serve warm as a side dish or main course.
- Can be stored in the fridge for up to 3 days.
