Ingredients

  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 4 cloves garlic, minced
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Rub the roast with olive oil, salt, and pepper.
  3. Spread minced garlic over the roast.
  4. Place rosemary and thyme on top of the roast.
  5. Put the roast in the oven and cook for 15 minutes.
  6. Reduce the temperature to 325°F (163°C) and continue cooking for 1.5 to 2 hours.
  7. Check the internal temperature; it should reach 135°F (57°C) for medium-rare.
  8. Remove from oven and let rest for 20 minutes before slicing.
