- 1 ribeye roast (5–7 pounds)
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 4 cloves garlic, minced
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
Instructions
- Preheat your oven to 450°F (232°C).
- Rub the roast with olive oil, salt, and pepper.
- Spread minced garlic over the roast.
- Place rosemary and thyme on top of the roast.
- Put the roast in the oven and cook for 15 minutes.
- Reduce the temperature to 325°F (163°C) and continue cooking for 1.5 to 2 hours.
- Check the internal temperature; it should reach 135°F (57°C) for medium-rare.
- Remove from oven and let rest for 20 minutes before slicing.
