- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced

- 1 bay leaf
- 2 tablespoons olive oil
Instructions
- Rinse the black-eyed peas under cold water.
- In a large pot, combine the peas and water. Bring to a boil.
- Reduce heat and simmer for 30 minutes.
- In a separate pan, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
- Add sautéed onion and garlic to the pot with peas, along with salt, black pepper, smoked paprika, and bay leaf.
- Simmer for an additional 30 minutes or until peas are tender.
- Remove bay leaf before serving.
