Ingredients

  • 1 cup black eyed beans
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 green chilies, slit
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1/2 tsp turmeric powder
  • Salt to taste
  • 2 tbsp oil
  • 1/4 cup fresh coriander, chopped

Instructions

  1. Soak black eyed beans overnight and drain.
  2. Heat oil in a pan and add cumin seeds.
  3. Add onions and sauté until golden brown.
  4. Add garlic, ginger, and green chilies, and sauté for a minute.
  5. Add tomatoes and cook until soft.
  6. Add spices and mix well.
  7. Add black eyed beans and enough water to cover them.
  8. Cook until beans are tender.
  9. Garnish with fresh coriander.
