A hearty black eyed beans curry that is flavorful and nutritious.
Ingredients

- 1 cup black eyed beans
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 green chilies, slit
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1/2 tsp turmeric powder
- Salt to taste
- 2 tbsp oil
- 1/4 cup fresh coriander, chopped
Instructions
- Soak black eyed beans overnight and drain.
- Heat oil in a pan and add cumin seeds.
- Add onions and sauté until golden brown.
- Add garlic, ginger, and green chilies, and sauté for a minute.
- Add tomatoes and cook until soft.
- Add spices and mix well.
- Add black eyed beans and enough water to cover them.
- Cook until beans are tender.
- Garnish with fresh coriander.

- Serve with rice or flatbread.
- Adjust spice levels to your preference.
