Ingredients

Instructions

  1. Soak black eyed peas overnight.
  2. In a pot, heat olive oil over medium heat.
  3. Add onion and garlic, sauté until soft.
  4. Add soaked black eyed peas and vegetable broth.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Add collard greens, cumin, salt, and pepper.
  7. Simmer for an additional 15 minutes.
  8. Serve hot.
