A hearty black eyed pea casserole that is easy to make and packed with flavor.
Ingredients

- 2 cups black eyed peas, cooked
- 1 cup diced tomatoes
- 1 cup bell pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheese
- 1 cup vegetable broth
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, sauté onion and garlic until translucent.
- Add bell pepper and cook for another 5 minutes.
- Stir in black eyed peas, tomatoes, cumin, paprika, salt, and pepper.
- Add vegetable broth and mix well.
- Transfer the mixture to a baking dish.
- Top with shredded cheese.
- Bake for 25-30 minutes until cheese is bubbly.
