Ingredients

  • 1 cup vegetable broth

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, sauté onion and garlic until translucent.
  3. Add bell pepper and cook for another 5 minutes.
  4. Stir in black eyed peas, tomatoes, cumin, paprika, salt, and pepper.
  5. Add vegetable broth and mix well.
  6. Transfer the mixture to a baking dish.
  7. Top with shredded cheese.
  8. Bake for 25-30 minutes until cheese is bubbly.
