Description
A fresh and healthy black eyed pea caviar recipe that is perfect as a dip or side dish.
Ingredients

- 1 can black eyed peas, drained and rinsed
- 1 red bell pepper, diced
- 1 small red onion, diced
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup olive oil
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine black eyed peas, red bell pepper, red onion, jalapeño, and cilantro.
- In a separate bowl, whisk together olive oil and lime juice.
- Pour the dressing over the black eyed pea mixture.
- Toss to combine and season with salt and pepper.
- Let it sit for at least 30 minutes before serving to allow flavors to meld.
Notes
- Serve with tortilla chips or pita bread.
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Adjust spice level by adding more or less jalapeño.
