Ingredients

- 2 cups cooked black eyed peas
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- In a food processor, combine black eyed peas, olive oil, lemon juice, garlic, salt, black pepper, and cayenne pepper.
- Blend until smooth.
- Stir in chopped parsley.
- Transfer to a serving bowl.
- Chill in the refrigerator for at least 30 minutes before serving.
